Quinoa Superfood Salad

Components

  • 2 cups hen broth
  • 1 cup raw quinoa
  • 1 cup corn (both frozen or canned)
  • 1 tablespoon lime juice
  • 1 teaspoon crimson wine vinegar
  • lime, zested
  • ½ teaspoon floor cumin
  • 2 tablespoons avocado oil
  • 1 (15 ounce) can black beans, drained
  • 1 small crimson bell pepper (seeded and chopped)
  • 1 avocado (chopped)
  • 1 small crimson onion (chopped)
  • ¼ cup chopped contemporary cilantro
  • salt and floor black pepper to style

Directions

  1. Carry hen broth to a boil in a 2-quart saucepan. Stir in quinoa. Cut back warmth to low; simmer, coated, till broth is absorbed, 15 to twenty minutes. Take away from warmth; stir in corn. Cowl and let stand till corn is warmed via, about 5 minutes.

  2. Whisk lime juice, crimson wine vinegar, lime zest, and cumin collectively in a big bowl. Whisk in avocado oil.

  3. Chop the avocados, crimson bell pepper, crimson onion and cilantro into small items.
